INGRIDIENTS:
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1/4 cup melted butter
- 1 cup sour cream
- 2 eggs
- 1 1/2 cups mashed ripe bananas (about 4 bananas)
- 3 teaspoons vanilla extract, divided
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup light brown sugar, packed
- 1/4 cup milk
- 2 cups confectioners' sugar
HOW TO MAKE
1. Preheat Oven:
- Preheat your oven to 350°F (175°C). Coat a 9 x 13-inch pan with cooking spray and set aside.
2. Make the Cake Batter:
- In a large bowl, using an electric mixer, beat the granulated sugar, softened butter, sour cream, and eggs until creamy.
- Beat in the mashed bananas and 2 teaspoons of vanilla extract.
- Add the flour and baking soda to the mixture; mix well until fully combined.
- Pour the batter into the prepared pan, smoothing the top lightly with a spatula.
3. Bake the Cake:
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
4. Prepare the Frosting:
- In a small saucepan over medium heat, melt the remaining butter.
- Stir in the brown sugar and milk, bringing the mixture to a boil while stirring constantly.
- Reduce the heat to low and cook for 2 minutes. Remove from heat and transfer to a large bowl. Let the mixture cool for 15 minutes.
5. Finish the Frosting:
- Add the confectioners' sugar and the remaining 1 teaspoon of vanilla extract to the cooled mixture.
- Beat with an electric mixer until the frosting is smooth.
6. Frost the Cake:
- Spread the frosting evenly over the cooled cake.
7. Serve:
