Brown Sugar Banana Cake

INGRIDIENTS:

  •  1 cup granulated sugar
  •  1/2 cup butter, softened
  •  1/4 cup melted butter
  •  1 cup sour cream
  •  2 eggs
  •  1 1/2 cups mashed ripe bananas (about 4 bananas)
  •  3 teaspoons vanilla extract, divided
  •  2 1/2 cups all-purpose flour
  •  1 teaspoon baking soda
  •  1 cup light brown sugar, packed
  •  1/4 cup milk
  •  2 cups confectioners' sugar

HOW TO MAKE 

1. Preheat Oven

  • Preheat your oven to 350°F (175°C). Coat a 9 x 13-inch pan with cooking spray and set aside.

2. Make the Cake Batter:

  • In a large bowl, using an electric mixer, beat the granulated sugar, softened butter, sour cream,  and eggs until creamy.
  • Beat in the mashed bananas and 2 teaspoons of vanilla extract.
  • Add the flour and baking soda to the mixture; mix well until fully combined.
  • Pour the batter into the prepared pan, smoothing the top lightly with a spatula.

3. Bake the Cake

  • Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.

4. Prepare the Frosting:

  • In a small saucepan over medium heat, melt the remaining butter.
  • Stir in the brown sugar and milk, bringing the mixture to a boil while stirring constantly.
  • Reduce the heat to low and cook for 2 minutes. Remove from heat and transfer to a large bowl. Let the mixture cool for 15 minutes.

5. Finish the Frosting:

  • Add the confectioners' sugar and the remaining 1 teaspoon of vanilla extract to the cooled mixture.
  • Beat with an electric mixer until the frosting is smooth.

6. Frost the Cake:

  •  Spread the frosting evenly over the cooled cake.

7. Serve
