For the Salad:
- 1 head Romaine lettuce, washed and torn into bite-sized pieces
- 150 g crusty bread (like baguette), cut into cubes
- 45 g grated Parmesan cheese
- 4 anchovy fillets, finely chopped
For the Dressing:
- 1/2 garlic clove, minced
- 1 large egg
- 1 1/2 tbsp lemon juice
- 3 tbsp olive oil
- 80 ml good quality olive oil
- 1/2 tbsp red wine vinegar
- Salt and pepper to taste
HOW TO MAKE
1. Prepare the Croutons:
- Preheat the oven to 350°F (175°C).
- Toss the bread cubes with 1 tbsp olive oil, salt, and pepper.
- Spread them evenly on a baking sheet and bake for about 10-15 minutes, or until golden and crispy. Remove from the oven and let them cool.
2. Make the Dressing:
- In a small bowl, whisk together the minced garlic, egg, lemon juice, and red wine vinegar.
- Gradually whisk in both olive oils until the dressing is creamy and emulsified.
- Season with salt and pepper to taste. Set aside.
3. Assemble the Salad:
- In a large salad bowl, combine the torn Romaine lettuce leaves, chopped anchovy fillets, and grated Parmesan cheese.
- Pour the prepared dressing over the salad and toss gently to coat the leaves evenly.
- Add the cooled croutons and toss again lightly.
4. Serve:
- Divide the Caesar salad onto individual plates or bowls.
- Optionally, garnish with additional Parmesan cheese shavings if desired.
- Serve immediately as a starter or as a side dish with your favorite main course.
