 Caesar Salad:



Ingredients:

For the Salad:

  • 1 head Romaine lettuce, washed and torn into bite-sized pieces
  • 150 g crusty bread (like baguette), cut into cubes
  • 45 g grated Parmesan cheese
  • 4 anchovy fillets, finely chopped

For the Dressing:

  • 1/2 garlic clove, minced
  • 1 large egg
  • 1 1/2 tbsp lemon juice
  • 3 tbsp olive oil
  • 80 ml good quality olive oil
  • 1/2 tbsp red wine vinegar
  • Salt and pepper to taste

HOW TO MAKE

1. Prepare the Croutons:

  • Preheat the oven to 350°F (175°C).
  • Toss the bread cubes with 1 tbsp olive oil, salt, and pepper.
  • Spread them evenly on a baking sheet and bake for about 10-15 minutes, or until golden and crispy. Remove from the oven and let them cool.

2. Make the Dressing:

  • In a small bowl, whisk together the minced garlic, egg, lemon juice, and red wine vinegar.
  • Gradually whisk in both olive oils until the dressing is creamy and emulsified.
  • Season with salt and pepper to taste. Set aside.

3. Assemble the Salad:

  •  In a large salad bowl, combine the torn Romaine lettuce leaves, chopped anchovy fillets, and grated Parmesan cheese.
  •  Pour the prepared dressing over the salad and toss gently to coat the leaves evenly.
  •  Add the cooled croutons and toss again lightly.

4. Serve:

  • Divide the Caesar salad onto individual plates or bowls.
  • Optionally, garnish with additional Parmesan cheese shavings if desired.
  •  Serve immediately as a starter or as a side dish with your favorite main course.
