INGREDIENTS:
- Rice noodles (or other type as per package instructions)
- 2 chicken breasts, sliced and seasoned with salt and pepper
- 3 medium red chilis, chopped
- 3 spring onions, chopped
- 2 eggs, beaten and seasoned
- Fresh coriander (or substitute dried mint)
- 1 tbsp lemon juice
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 3 tbsp fish sauce
- Optional ingredients for enhanced flavor:
- 60g cooked shrimp
- 3 tbsp roasted peanuts, slightly ground
- Bean sprouts
- Mange tout or sugar snap peas
HOW TO MAKE
- Soak the rice noodles in hot water for about 20 minutes or until they are cooked to your liking. Drain and set aside.
- Heat oil in a pan and pour in the beaten eggs to make an omelette. Cook until set, then transfer to a plate, let it cool, and chop into strips.
- In the same pan or wok, heat more oil and add the chicken. Once the chicken is sealed and lightly browned on all sides, add minced garlic and stir-fry briefly.
- Add chopped spring onions and shrimp (if using), stir-fry for another minute.
- Introduce chopped red chilis, drained rice noodles, fish sauce, lemon juice, brown sugar, and peanuts (if using). Stir-fry over high heat for another minute to combine flavors.
- Toss in bean sprouts, omelette strips, and mange tout or sugar snap peas. Stir-fry briskly for about 30 seconds until everything is heated through.
- Finish by tossing in fresh coriander (or dried mint) and adjust seasoning to taste with salt and pepper. Serve hot immediately.
