THAI GREEN CURRY

            THAI GREEN CURRY


INGREDIENTS:

  • 2 Chicken breasts, sliced into strips
  • 1 can coconut milk (regular or low-fat)
  • 1 Onion, chopped
  • 1 Aubergine (eggplant), chopped
  • 1 Green chilli, chopped
  • Thai Green Curry Paste

HOW TO MAKE :

  •  Heat a large non-stick wok or frying pan over low heat. Add the Thai Green Curry Paste and cook for 5 minutes.
  •  Add the sliced chicken breasts and chopped onion to the pan. Cook for 5-8 minutes until the chicken  is no longer pink.
  •  Stir in the chopped aubergine and pour in the coconut milk. Simmer for about 10 minutes or until the chicken is fully cooked and tender.
  •  Scatter chopped green chilli over the curry and serve hot with rice.
