INGREDIENTS:
- 2 tablespoons butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chopped fresh tomatoes (or 1 can of diced tomatoes)
- 1 cup chicken or vegetable broth
- 1/2 cup heavy cream or half-and-half
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, for serving (optional)
HOW TO MAKE:
1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
2. Add the minced garlic and cook for another minute, until fragrant.
3. Add the chopped tomatoes, broth, and dried basil. Stir to combine.
4. Bring the mixture to a simmer and let cook for 20-25 minutes or until the flavors have melded together and the soup has thickened slightly.
5. Use an immersion blender or a regular blender to puree the soup until smooth.
6. Stir in the heavy cream or half-and-half and season with salt and pepper to taste.
