Linguine with Shrimp and Scallops

INGREDIENTS:

  • 12 oz (340g) linguine pasta
  • 1 pound (450g) large shrimp, peeled and deveined
  • 1 pound (450g) scallops
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup (60ml) white wine
  • 1/4 cup (60ml) lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

HOW TO MAKE:

1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

2. In a large skillet, heat the olive oil over medium-high heat. Add the garlic and sauté for 1 minute until fragrant.

3. Add the shrimp and scallops to the skillet. Cook for 2-3 minutes per side, or until the seafood is pink and cooked through.

4. Add the white wine and lemon juice to the skillet. Scrape up any browned bits from the bottom of the pan.

5. Add the cooked linguine to the skillet, tossing to combine with the seafood and sauce. If needed, add some reserved pasta water to loosen the sauce.

6. Season with salt and pepper to taste.

7. Serve hot, garnished with chopped parsley if desired.

Please note that you can adjust the amount of garlic, wine, and lemon juice to your liking. Additionally, you can substitute other types of seafood like mussels, clams, or cod if you prefer.
