INGREDIENTS:
- 1 lb (450g) beef stew meat, cubed
- 3 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 2 zucchinis, sliced
- 1 cup green olives
- 1 can diced tomatoes (14 oz)
- 1 cup beef broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped, for garnish
HOW TO MAKE
1. Brown the Beef:
- In a tagine or large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.
2. Prepare the Base:
- Add the remaining olive oil to the pot. Add the onion and garlic, cooking in low heat until softened.
3. Add Vegetables:
- Add the carrots, potatoes, and zucchinis. Cook for about 5 minutes, stirring occasionally.
4. Spice it Up:
- Add cumin, coriander, cinnamon, and ginger. Stir well to coat the vegetables with the spices.
5. Combine Ingredients:
- Return the beef to the pot. Add diced tomatoes, beef broth, and green olives. Stir to combine.
6. Simmer:
- Bring the mixture to a simmer, then reduce heat to low. Cover and cook for about 1-1.5 hours, until the beef is tender and the vegetables are cooked through.
7. Season and Serve:
- Season with salt and pepper to taste. Garnish with fresh cilantro or parsley before serving.
