Moroccan Beef and Vegetable Tagine

INGREDIENTS:

  •  1 lb (450g) beef stew meat, cubed
  •  3 tbsp olive oil
  •  1 onion, finely chopped
  •  3 cloves garlic, minced
  •  2 carrots, sliced
  •  2 potatoes, cubed
  •  2 zucchinis, sliced
  •  1 cup green olives
  •  1 can diced tomatoes (14 oz)
  •  1 cup beef broth
  •  1 tsp ground cumin
  •  1 tsp ground coriander
  •  1 tsp ground cinnamon
  •  1 tsp ground ginger
  •  Salt and pepper to taste
  •  Fresh cilantro or parsley, chopped, for garnish

HOW TO MAKE

1. Brown the Beef:

  • In a tagine or large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.

2. Prepare the Base:

  • Add the remaining olive oil to the pot. Add the onion and garlic, cooking in low heat until softened.

3. Add Vegetables:

  • Add the carrots, potatoes, and zucchinis. Cook for about 5 minutes, stirring occasionally.

4. Spice it Up:

  • Add cumin, coriander, cinnamon, and ginger. Stir well to coat the vegetables with the spices.

5. Combine Ingredients:

  • Return the beef to the pot. Add diced tomatoes, beef broth, and green olives. Stir to combine.

6. Simmer:

  • Bring the mixture to a simmer, then reduce heat to low. Cover and cook for about 1-1.5 hours, until the beef is tender and the vegetables are cooked through.

7. Season and Serve:

   - Season with salt and pepper to taste. Garnish with fresh cilantro or parsley before serving.
