Ingredients

1 large sliced Medium Aubergine
1 sliced lengthways Medium Courgette
10 spray(s) Calorie-free cooking spray
1 finely chopped Medium Onion(s)
1 clove crushed Garlic
All types of peppers 225 g, roasted and drained in brine
6 The whole medium-sized Egg
4 tbsp Raw skimmed Milk
2 level tsp Dried oregano
¼ tsp or to taste Salt
¼ tsp or to taste Black pepper

The boring vegetables can turn out to be an exciting baked weight watcher recipe with this vegetable Frittata. Cut the veggies into wedges and serve with more vegetables as a salad with your main meal.

Step 1

Put the grill to preheat. Place the aubergine and courgette slices on the grill tray. Coat the slices with fat-free cooking spray. Grill the pieces on each side for about 3 minutes. You may also cook them on a charcoal-grill plate.

In the meantime spray a frying pan with the fat-free cooking spray and add garlic and onion once the fat is heated. Cook the onion and garlic for 3-4 minutes by frequent stirring and remove from the heat.

Put the oven to preheat and spray a 9-inch baking tray with fat-free cooking spray. Add half of the aubergines in a layer and half peppers and then the courgette all over. Sprinkle the onion and garlic mix in each layer. Repeat the arrangement with the remaining aubergine and peppers.

Beat all the eggs to mix with the herbs and milk in a mixing pan. Season the batter with pepper and salt. On the egg-mix pour the vegetables and bake for 25 minutes in the oven till completely brown and set.

Once baked, take it out of the oven and slice it into even wedges and serve hot or cold.
