Ingredients

Saag Aloo
Vegetable oil 1 tsp
Red onions chopped 2
Garlic 2 cloves peeled and minced
Cumin 1 tsp
Turmeric 1 tsp
Mustard seeds 1 tsp
White-skinned potatoes 2 chopped into 2cm cubes
Chicken stock 300ml
Baby spinach 150 gms
Beef Kofta Curry
Beef mince 500gms (ground beef)
Big pinch of salt and pepper
Coriander 1 bunch finely chopped
Vegetable oil 1 tsp
Tandoori paste 3 tsp
Coconut milk 400ml
Chicken stockpot 1

Indian cuisine is all about classic blend of aroma and taste. The juicy meatballs recipe dipped in creamy curry with spiced potatoes are an authentic main course cuisine that is even loved by kids for being mild.

Steps

Step 1

In a pan heat oil and add onions when the oil is heated. Cook the onions for 5 minutes till they soften. Add garlic and cook for some time. Spoon out half of the onion mixture into a bowl.

To the remaining onion in the pan, add turmeric, cumin and mustard seeds and stir the mixture for a minute.

To the pan, add the stock and the potatoes and stir and bring to boil. Cover the pan and turn the heat down to simmer. Simmer till the potatoes are tender.

Make the meatballs in the meanwhile by adding the beef mince with salt, coriander, and pepper. Mix well and form balls as per serving.

In a skillet heat oil and add meatballs. Cook them over medium heat till they turn brown.

Shift the meatballs to a bowl and add the onions kept aside to the same pan. Add the tandoori paste and cook at low heat for a minute. Next add coconut milk, stockpot and stir in simmer for 5 minutes.

In this mixture add the meatballs and simmer for 3-4 minutes.

Now when the potatoes are cooked, take the lid off and cook till the liquid is almost dried out. Stir often so that it’s not burnt.

Add spinach to the potatoes and cover it to let it wilt under steam only.

Sprinkle the coriander on top and serve the beef kofta recipe with saag aloo.
