Ingredients

2 medium-sized Raw Mackerel fillets
75 g Half Fat Crème Frâiche
1 tbsp, rinsed Capers
1 tbsp Dill finely chopped and some more for garnishing
20 ml Fresh Lime Juice
2 thins Brown Sandwich
250 g Beetroot cut into wedges
½ Lemon zest

Toasted bread topped with beetroot, sour cream and smoked fish is something that could make your
supper a party every night. This outstanding Weight watcher recipe is well capable of winning hearts
whenever served.

Step 1

Preheat your grill to medium heat and lightly season the fish fillets. Place the fillets on a small size baking tray. Grill the fillets for 4 minutes max till they are cooked thoroughly. Take off from the grill and leave to cool and then break it into flakes.

Mix the cooled mackerel fillets with crème fraîche, chopped dill, capers and a generous
squeeze of lime.

Split the sandwich thins and toast them to golden brown and crispy.

Garnish with beetroot and the Mackerel flakes, lemon zest, dill and serve hot and crisp.
