Ingredients

Boneless pork loin roast around 2 ½ pound
Olive oil 1/4 cup
Cracked black pepper and Kosher salt
Mojo Spread:
Mayonnaise 3 tablespoons
Olive oil 2 tablespoons
Chopped cilantro leaves 1 tablespoon
Kosher salt 1/2 teaspoon
Minced garlic 3 cloves
Juice of 1 lime
Portuguese rolls or 4 Cuban sandwiches cut lengthwise
Whole-grain mustard 3 tablespoons
Pinch salt
Thinly sliced ham 3 tablespoons
Sliced swiss cheese 4 ounces
2 large dill pickles, thinly sliced
Salt-free butter 2 to 3 tablespoons melted

In the cigar factories of Florida, the workers used to survive on a whole sumptuous meal, which was a sandwich made out of ham and cheese. This ultimate Latin recipe not only satisfies your hunger but meet your craving for cheesy ham.

Step 1

First, put the oven to preheat at 400 degrees F. Nicely coat the pork with oil and sprinkle with pepper and salt liberally. Take a rack and shift the pork to it, placing it over a heavy bottom roast pan. Roast the pork and after sometime insert a meat thermometer to read 140 degrees F or about an hour. Let the pork out of cooking for 10 minutes Let the pork rest for 10 minutes. Keep reserve 1 ¼ pound of the meat for sandwich cutting to ¼ inch slices each. Reserve the rest pork for other recipe.

To make the mojo spread add oil, mayonnaise, salt, cilantro, garlic and lime juice in a bowl and stir well till evenly combined and easy to spread.

Now heat a large skillet of cast-iron over medium heat.

Spread 2 tablespoons of the mojo spread and 2 teaspoons of mustard on top of the bread slices and spread pork seasoned with salt on the bottom half of the bread. Garnish them with cheese ham and pickles. Attach both the halves together now.

At the last coat the skillet with butter and place 2 sandwiches at a time brushing the top with butter. Cover with another cast-iron pan on top so that sandwiches are pressed down. Cook them till the bread is turned golden brown on the one side and then turn and repeat the other side. Cook for 2-3 minutes each side.

Cook all the sandwiches in the same way and serve hot.
