Fried Meatballs with Tahini Sauce

Ingredients

Meatballs:
Millet 1/2 cup
Ground beef chuck 1 lb (20% fat)
Finely grated 5 garlic cloves
Ground coriander 1 tsp.
Freshly ground black pepper 1 tsp
Kosher salt 1 1/2 tsp. and some extra
Sauce and assembly:
Vegetable oil about 9 cups (for frying)
Tahini 1/2 cup
Finely grated 1 garlic clove, finely grated
Fresh lemon juice 3 Tbsp.

Deep-fried meatballs served dipped in remarkably versatile Tahini Sauce is sure to remind you of Middle East wherever you are.

Step 1

Take a dry medium skillet and over medium heat cook the millet by occasional stirring. Toast it lightly for 3 minutes till the fragrance is out. Shift to a small bowl and let cool.

In the meantime in a medium-size bowl mix the beef with coriander, garlic, and salt nicely with your hands. Be careful not to overwork.

Roll the meat mixture on your palm one at a time lightly and form 1 3/4" balls and place on a rimmed baking tray.

Coat each meatball with the toasted millet pressing firmly with your palms. Repeat the process till all the meatballs are coated nicely. Now place the meatballs back to the sheet and into the freezer to chill for 20 minutes to 2 hours. This will ensure the firm setting of the millet and would not come out while frying.

Take a large, heavy pot and pour oil and heat it over medium temperature till the deep-fry
thermometer measures 350°F.

In a medium bowl, combine and mix the tahini well with garlic. Gradually add some water and lemon juice and whisk continuously till the sauce is smooth and natural flow. Sprinkle salt over it.

Use a slotted spoon to shift the meatballs gently into the oil and fry them deep for 2 ½ minutes undisturbed.

Transfer the fried meatballs onto paper towels lined on a baking sheet.

Season with tahini sauce and salt and serve hot.
