Persian Chicken with Turmeric and Lime

Ingredients

Chicken thighs ½ pounds (boneless, skinless cut into bite-sized pieces)
Medium onion 1(halved and thinly sliced)
Ground turmeric 2 teaspoons
Large garlic cloves 3 (finely chopped and 1 garlic clove smashed)
Fresh lime juice 2 tablespoons (8 slices for garnishing) total 3-4 limes
Olive oil 3 tablespoons
Ground cumin 1/4 teaspoons
Kosher salt 1 3/4 teaspoons (keep extra)
Freshly grounded black pepper 1 teaspoon
Fine basmati rice 1 cup
Ground cardamom 1/4 teaspoon
Ground cinnamon 1/4 teaspoon
Plain Yogurt 1 cup (optional)
English hothouse 1 or a large size cucumber (peel and cut lengthwise and crosswise about 1/2" size pieces.
Herb leaves 1 cup (mint, cilantro, and dill)
Shelled unsalted pistachios 1/3 cup (chopped coarsely)
Sumac (for garnishing)

Chicken cooked in Middle Eastern spice flavors and topped with crunchy cucumber salad with a hint of Lime and Sumac. This golden dish with a lovely citrus tang is a hearty serving for any hungry lunch or dinner.

Step 1

Take a medium bowl and mix onion, chopped garlic, turmeric and lime, oil 1 tsp, cumin 2 tsp, salt and pepper to taste.

In a medium heavy saucepan heat oil over medium-high heat. Now add smashed garlic with the rice and cook stirring and frequently mixing till it is toasted lightly and starts to fragrant.

Add cinnamon, cardamom, salt cumin, and pepper to the water and put to boil. After it starts boiling reduce heat to simmer and cook the rice covered for about 18-20 minutes. Remove it from the heat and set it aside to cool before serving.

In the meantime, heat the remaining oil in medium-high flame in a large size skillet till very hot but not smoking. Add the marinated chicken mixture and start cooking by frequently stirring for 6-8 minutes till the chicken is cooked thoroughly.

After removing from heat spread yogurt mix on top for seasoning and cover to keep the flavors in and warm as well.

In a separate bowl, gently add and toss cucumber, herbs, and salt to mix well.

Mix the rice with a fork and divide between bowls. Place chicken over the rice and top it with cucumber slices, sumac (optional), pistachios.

Squeeze lime wedges generously before serving.
