Ingredients

Flank steak 2 1/2 pounds
Garlic cloves 2
Yellow onion 1/2 large roughly chopped
Dried oregano 2 tablespoons
Salt 1 tablespoon
Black peppercorns 1 tablespoon
Bay leaves 2
Red wine 4 ounces
Worcestershire sauce 4 ounces
Olive oil 2 ounces
Red onion 1 julienned
White onion 1 julienned
Green bell pepper 1 julienned
Red bell pepper 1 julienned
Tomato sauce 1/2 cup
Red wine vinegar 2 ounces
Pitted green olives 1 cup
Green peas 1 cup
Roma Tomato 1 julienned

Shredded cooked beef served on rice or tortillas and garnished with cheese, fresh cilantro, and sour cream is a Latin recipe that one could ever forget.

Step 1

Take a large pot and mix garlic, yellow onions, oregano, flank steak, peppercorns, red wine and Worcestershire and bay leaves. Cover the ingredients with water and bring to boil. Reduce to simmer and cook for 3 hours till the flank steaks fall apart.

Removing the flank steaks from the pot cut them into 3-inch size and put aside. Strain out the broth and reserve to be used in some other step later.

In the next step, wipe the pot out and coat it with olive oil. Then add white onions, red onions, green peppers, oregano, and red peppers into it. Cook for around 8-10 minutes over high heat with very frequent stirring.

Now its turn to add the flank back to the pot and it also add red wine vinegar, tomato sauce, reserved broth, Worcestershire and red wine. Bring the mix to boil and reduce it to simmer immediately. Cook at this flame for 30 minutes at least.

Add peas, olives, and tomatoes in the mix. Remove it from the flame and let it sit for 5 minutes.
