Ingredients

Uncooked rice 1 ½ cups (long-grain brown rice preferable)
Butter 1 ½ tablespoons
Kosher salt ½ teaspoon (fine sea salt can also do)
Peanut Broth
Olive oil 1 teaspoon
Garlic 4 cloves pressed or minced
Peeled fresh ginger pressed or minced about a thumb tip
Thai red curry paste 1 tablespoon
Soy sauce ¼ cup (I used reduced-sodium tamari)
Natural peanut butter ¼ cup
Vegetable broth 4 cups
Light coconut milk 14 ounces or 1 cup
Generously squeezed honey
For Garnishing
Matchstick-cut carrots 1 cup
Red bell pepper thinly sliced 1
English cucumber halved lengthwise and thinly sliced half of a whole.
Chopped fresh cilantro ¼ cup
Chopped dry-roasted peanuts ¼ cup
Chopped fresh mint 2 tablespoons
Green onions 2 thinly sliced
Jalapeño 1 thinly sliced
Lime 1 cut into wedges

An easy home cooked meal made out of peanut is equally fresh and hearty authentic Thai recipe. A  whole sumptuous Asian meal that could make your day is none other than this Thai Spiced rice bowl.

Step 1

To make the rice, cook it based on the package instructions when the rice starts to boil stir in it the salt and butter.

To make the broth first of all heat a medium-sized saucepan over medium flame. Once the pan is hot, add oil to it. Adding ginger and garlic to the pan, cook it for some 30 seconds by stirring continuously. To this add the ready broth ingredients. Mix it well and bring them to boil. Reduce the flame to simmer and cover it to 10 minutes to bring the flavor.

Step 3

In the meantime prepare the garnish. Take the serving bowls and divide equally among the bowls and top each bowl with the broth. Garnish the dish with onion, jalapeno and a squeeze of lime.
