Ingredients

Soup
Frontier Co-op cinnamon sticks Two 3-inch
Frontier Co-op whole cloves 3
Frontier Co-op star anise 2
Large White onion 1 peeled and quartered
Piece of fresh ginger 4-inch peeled and halved lengthwise
Vegetable stock or broth 4 cups
Water 4 cups
Reduced-sodium tamari or soy sauce
Rice noodles 6 ounces
Avocado oil 1 tablespoon or oil of your choice
Thinly sliced shiitake mushrooms 5 ounces
Salt
Garnishing
Mung bean sprouts
Cilantro or Sprigs of fresh basil
Sprigs of fresh mint
Green onions sliced thinly
Fresh jalapeño Very thinly sliced
Small Lime wedges

Thanks to the Vietnamese spice family that made the Vegetarian Pho is a most wanted mushroom recipe straight from the Vietnamese kitchen. Sauteed shiitake mushrooms with herbs give the recipe a tweak of taste to your tongue.

Step 1

Over medium flame heat a soup pot or a Dutch pan. When heated, add cinnamon sticks, star anise, cloves and toss well till it releases fragrant by stirring continuously for about 4 minutes.

To the pan, add ginger, garlic, onion, vegetable stock, tamari, and water. Increase the heat to high flame and bring the mix to boil. Again bring back to a gentle simmer and maintain it for 30 minutes and allow the flavors to meld properly.

In the meanwhile get your rice noodles ready by cooking them based on the package instructions. Now set them apart.

In the next step, prepare the shiitake mushrooms. Put oil in the medium skillet and warm it till starts shimmering. Add mushrooms to the oil and a few sprinkles of salt. Cook the mushrooms till they become light brown and tender for about 6 minutes and keep them aside.

Once the broth is cooked, strain out the vegetables and the spices. Dash into it some extra tamari for a seasoning till the spice flavors start to come out.

Scoop out the broth into bowls and add the cooked noodles, mushrooms and garnish with the ingredients to your heart out.

Serve hot with chopsticks and soup spoons.
