Ingredients

Peeled Butternut Squash 800 g cut into 2cm cubes
Calorie-free cooking spray
1 cut into slices Medium-sized Red onion
4 skin out Medium Chicken breast
80 g skin out Chorizo Sausage
25gms Fresh Breadcrumbs
1½ tablespoons Olive Oil
1 level tablespoons Dijon Mustard
1½ tsp Balsamic vinegar
80 g baby leaves Raw Kale

A cold-weather salad made out of regular kitchen ingredients like when served with delicious chorizo
crumbs forms an exact weight-watcher recipe for all ages.

Step 1

Put the oven to preheat at 200°C, gas mark 6, and fan 180°C. On a baking tray arrange this quash spray the low-fat cooking spray after an excellent seasoning. Roast the preparation for 45 minutes till the squash becomes tender. After 20 minutes of baking turn the squash and add onion to it.

Cook the chorizo in a non-stick pan over medium heat till the oil starts to release. Now add the bread crumbs and cook till they become crisp and crunchy.

In a small mixing bowl whisk the mustard, oil, and vinegar to use as seasoning. Adding the squash, onion, and kale to the frying pan toss it well to coat nicely.

Distribute the salad preparation to plates and serve garnished with chorizo crumb mix and the grilled chicken.
